- 3 cups white rice (cooked short-grain, I use this coconut rice recipe - for a grain-free version use cauliflower rice or omit the rice altogether)
- 1 1/2 Tbsp. coconut oil (unrefined, I love THIS coconut oil)
- 1 yellow onion (peeled and diced)
- 1 lb. ground beef (grass-fed)
- 1 apple (organic, cored and diced)
- 2 Tbsp. dried thyme
- 1 Tbsp. granulated garlic
- 2 tsp. dried oregano
- sea salt (to taste, I love THIS salt)
- black pepper (to taste)
- 1/2 cup shredded cheese (optional - I like mozzarella or cheddar)

Very good!!! I added some mushrooms, and mixed cheddar and mozzarella . I didn't have thyme so I used Italian spice and threw in a pinch of rib seasoning...awesome dinner!
