- 1 handful dried shrimp (– soak in water)
- 4 Tbsp. preserved radish (minced, chye poh)
- 1 clove garlic (– minced)
- 3 shallots (– minced)
- 2 cups bean sprouts
- 3 stalks chives (green, koo chye / spring onions – cut into 2-inch length)
- 2 eggs
- 1 cup sauce (Pad Thai, *, please see instructions at the end)

- coriander
- peanuts (Crushed)
- chilli flakes (Dried)
- 1 1/2 cups palm sugar (– chopped)
- 1/4 cup white sugar
- 1 cup Thai fish sauce
- 1 cup tamarind concentrate (/ paste + 1/2 cup water)
