- 1 lb. rhubarb (washed, trimmed and cut into 1” chunks)
- 1/2 cup granulated sugar
- 1/3 cup water
- 1 strip lemon zest (or orange zest)
- 1 cup jam (rhubarb)
- 1 cup strawberries (ripe, washed, dried, hulled and quartered)
- 1 Tbsp. cointreau (Grand Marnier, or orange juice)
- 1/2 cup mascarpone
- 1/2 cup plain yogurt
- 1/4 cup heavy cream
- 1 tsp. grated orange (optional)
- 1 tsp. honey (or more, if you like it sweeter)
- 1/2 tsp. vanilla extract
- 1 tsp. cointreau (optional)
- lady fingers (I use the dry, crispy kind)
- honey (for drizzling on top, optional)
- demerara sugar (for sprinkling on top, optional)
