- 2 cups strawberries (frozen or fresh)
- 1/3 cup raw honey
- 1/2 tsp. tapioca flour
- 4 eggs
- 1/4 cup coconut oil (refined, melted and cooled to almost room temp, I used refined to avoid coconut flavor, but unrefined would work as well)
- 1/2 Tbsp. pure vanilla extract
- 3/4 cup maple sugar (pure, coconut sugar is fine too, though the color will be darker)
- 3 Tbsp. full fat coconut milk
- 1 tsp. apple cider vinegar
- 2 cups blanched almond flour
- 1/3 cup tapioca flour
- 3/4 tsp. baking soda
- 1/8 tsp. fine grain sea salt
- 2 cans coconut cream (mine are 5.4oz chilled, about 1 and ½ cups*)
- 3 Tbsp. powdered sugar (organic, NOT strict paleo OR 2 tbsp raw honey {for strict paleo}**)
- 1/2 tsp. pure vanilla extract
- strawberry (Fresh, slices for topping/garnish, optional)
