  • 2 cups strawberries (frozen or fresh)
  • 1/3 cup raw honey
  • 1/2 teaspoon tapioca flour
  • 4 eggs
  • 1/4 cup coconut oil (refined, melted and cooled to almost room temp, I used refined to avoid coconut flavor, but unrefined would work as well)
  • 1/2 tablespoon pure vanilla extract
  • 3/4 cup maple sugar (pure, coconut sugar is fine too, though the color will be darker)
  • 3 tablespoons full fat coconut milk
  • 1 teaspoon apple cider vinegar
  • 2 cups blanched almond flour
  • 1/3 cup tapioca flour
  • 3/4 teaspoon baking soda
  • 1/8 teaspoon fine grain sea salt
  • 2 cans coconut cream (mine are 5.4oz chilled, about 1 and ½ cups*)
  • 3 tablespoons powdered sugar (organic, NOT strict paleo OR 2 tbsp raw honey {for strict paleo}**)
  • 1/2 teaspoon pure vanilla extract
