This Strawberry Salad with Balsamic Vinegar provides crunch, sweetness and savory tartness all in one dish. It takes about 25 minutes to prepare so it is perfect for a weeknight or an office lunch. It has 240 calories too, so it isn’t hard on the waistline. If you want a fresh and aromatic salad, then this will please the palate.

- 10 strawberries (disinfected and thinly sliced)
- 2 Tbsp. balsamic vinegar
- 2 Tbsp. olive oil
- salt
- ground black pepper
- 3 cups lettuce (assorted, in bite-sized pieces)
- goat cheese (optional)

Directions
- Place the strawberries in a bowl and dress with the vinegar. Stir and let them rest for 15 minutes in the refrigerator.
- Drain the strawberries and set aside, keeping the vinegar.
- Add the olive oil and salt and pepper to taste to the vinegar. Mix until it emulsifies.
- Place the lettuce in a salad bowl and pour the dressing over it, mixing carefully.
- Add the strawberries, and goat cheese if desired.
