    Directions

    1. Preheat oven to 350°F. Whip egg whites until stiff, gradually adding 1/4 cup sugar. Add egg yolks and 1 tsp vanilla then fold in flour and baking powder. Transfer to a 10 inch cake pan, smooth and bake for 15 mins until golden brown. Remove from oven and let cool in the pan.
    2. Bloom gelatin in cold water to soften. Mix cream cheese, 1/2 cup sugar, 1 tsp vanilla extract and lemon juice. If using sheet gelatin, squeeze out excess water. Combine bloomed gelatin and 3 tbsp cream cheese mixture and gently heat until gelatin melts. Mix with main cream cheese mixture. Whip cream until stiff then fold in. Spread over cooled cake and chill for 1 hour. Top with 1 1/4 lb strawberries and chill for 2 hours.
    3. Heat remaining sugar with 3/4 cup water and heat until dissolved. Drizzle over cake then chill for 1 hour.
    4. To serve, purée remaining strawberries with powdered sugar. Remove cake from pan and place on serving plate. Drizzle strawberry purée over top.
