A recipe I adapted from one of my Mom's cooking magazines.
Ingredients

4 SERVINGS
- coarse salt and ground pepper
- 1 tsp. olive oil (extra-virgin preferred)
- 3 garlic cloves (roughly chopped)
- 1 yellow onion (small, diced small)
- 1 lb. ground beef chuck (85% lean)
- 1 3/4 tsp. ground cumin
- 1 cup corn kernels
- 28 oz. tomato sauce
- cheddar cheese (grated)
- montreal steak seasoning

Directions
- In a large skillet heat olive oil over medium.
- Add garlic and onion and cook until onion is translucent, 3 minutes.
- Increase heat to medium-high, add beef, and cook, breaking up meat with a wooden spoon, until no longer pink, about 5 minutes.
