- 1 stem lemongrass (dry outer leaves removed, roughly chopped)
- 1 piece galangal
- 1 lime (zest only)
- 5 coriander roots (and stalk)
- 1 tsp. shrimp paste (blachan)
- 240 mL coconut milk (thick)
- 100 grams palm sugar (/3½oz)
- 100 grams choy sum (/3½oz)
- 100 grams gai lan (/3½oz, or more choy sum, or bok choi)
- 4 Tbsp. vegetable oil
- 500 grams beef fillet (thinly sliced)
- 5 lime leaves (shredded)
- 1 red chilli (long, finely chopped)
- 3 Tbsp. curry paste (from above)
- 1 handful thai basil
- 1 handful mint
- 1 handful coriander
- 1 handful roast peanuts (crushed)
