- 1 Tbsp. groundnut oil
- 1 clove garlic (finely chopped)
- 10 grams ginger (finely chopped)
- 50 grams carrot (cut into matchsticks)
- 50 grams red pepper (deseeded, and cut into matchsticks)
- 50 grams tenderstem broccoli (cut into 5cm pieces)
- 1 large egg (beaten)
- 100 grams beansprouts
- 1 1/2 Tbsp. Thai fish sauce
- 1 Tbsp. sweet chilli sauce
- 1 tsp. brown sugar
- 2 tsp. lime juice
- 20 grams unsalted peanuts (roasted, roughly crushed)
- 10 grams coriander leaves (roughly chopped)
- 1/2 red chilli (finely sliced, optional)
