- 350 grams ramen style noodles (instant, cooked and drained)
- 80 mL light soy sauce
- 3 Tbsp. rice wine
- 2 tsp. sugar (castor)
- 1 Tbsp. curry powder (I use a Malaysian one)
- 1 brown onion (finely sliced)
- 3 large garlic cloves (sliced)
- 5 cms ginger (piece of, diced)
- 1 green chilli (long, finely chopped)
- 2 tsp. mustard seeds
- 1 tsp. salt (flakes)
- 120 grams bean sprouts
- 2 handfuls frozen peas
- 6 shiitake mushrooms (finely sliced)
- 4 spring onions (finely sliced)
- 3 cms batons (optional)
- 1/4 bunch garlic chives (optional)
- 6 prawns (green, peeled, deveined and cut into 1cm pieces)
- 2 eggs (beaten with a pinch of salt)
- 3 Tbsp. neutral oil
- 1 handful coriander leaves (plus extra to garnish)
