- 3 Tbsp. light soy sauce
- 1 Tbsp. malt vinegar
- 1 Tbsp. brown sugar
- 1/2 tsp. sesame oil
- 2 Tbsp. peanut oil
- 5 cms ginger (x 2cm knob, 20g, finely sliced)
- 6 fresh shiitake mushrooms (destemmed, left whole)
- 110 grams pressed tofu (five-spiced, *, ½ packet, finely sliced)
- 3 Tbsp. shao hsing wine (or dry sherry)
- 2 garlic cloves (crushed)
- 2 cabbage leaves (Chinese, thickly sliced on the diagonal)
- 100 grams cloud ear fungus (fresh black, 1 packet, cores removed, roughly torn)
- 2 spring onions (cut into 7cm lengths)
