- 1 Tbsp. annatto seeds
- 1/2 cup shallots (finely chopped)
- 1/2 cup olive oil
- 1/4 cup minced garlic (finely, about 8 cloves)
- 1/4 cup red pepper flakes
- 1/3 cup bean paste (ground)
- 2 Tbsp. rice wine
- 2 Tbsp. sugar
- 2 Tbsp. light soy sauce
- 2 Tbsp. fish sauce
- 2 Tbsp. chicken stock (or water)
- 1 pinch sugar
- 2 Tbsp. olive oil
- 1 lb. boneless chicken (skinless, use breast or thigh meat, or a mix of both, cut into 1-inch cubes)
- 1 cup red onion (thinly sliced)
- 2 tsp. chopped garlic (finely)
- 1/4 cup lemongrass (finely minced)
- 1 chile (red or green jalapeño, stemmed and thinly sliced on the diagonal into rings)
- 2 Tbsp. rice wine
- 1 Tbsp. chile paste (Roasted)
- 2 scallions (trimmed and cut into 1-inch pieces)
- 1 Tbsp. roasted peanuts (finely chopped, for garnish, optional)
