- 1 carrot (peeled and cut into matchsticks)

- 1/2 yellow onion (thinly sliced)
- 1/2 tsp. minced garlic
- 8 warm water (dried Chinese black, shiitake mushrooms, soaked in, for 30 minutes, then drained, stemmed, and sliced.)

- 3 Tbsp. unsweetened coconut milk
