- 1/3 cup asian basil leaves (roughly chopped)
- 6 oz. tofu
- 1 carrot (peeled and cut into matchsticks)
- 2 Tbsp. vegetable oil
- 1/2 yellow onion (thinly sliced)
- 1/2 tsp. minced garlic
- 8 warm water (dried Chinese black, shiitake mushrooms, soaked in, for 30 minutes, then drained, stemmed, and sliced.)

- 2 tsp. sugar
- 3 Tbsp. unsweetened coconut milk
- 1/2 cup roasted peanuts (chopped)
- 1 clove garlic
- 2 Thai bird chilies (fresh)

- 2 1/2 Tbsp. fresh lime juice (with pulp)
