- 1/2 lb. crab meat
- 1 tsp. canola oil
- 1/2 cup diced onion (medium-)
- 1 tsp. minced garlic
- 1/4 cup broth (chicken or vegetable)
- 1/2 cup scallions (green-part, 1″ pieces)
- 2/3 cup celery leaves (with some stems, 1″ pieces)
- 1/2 cup sweet peppers (diced, or sliced red & orange, add 2-3 red Thai chili peppers if you like the heat)
- 1/4 tsp. ground white pepper
- 2 large eggs
- 1/2 cup milk (I use whole milk, 100% lactose free.)
- 1 tsp. chili paste
- nam prik pao
- 2 tsp. curry powder (I use hot Madras curry powder. There are many blends of curry powder and they are different in taste and strength. It’s important to experiment!)
- 1/2 tsp. sauce (Maggie)
- 1/2 tsp. soy sauce (thin)
- 1 tsp. oyster sauce
