  • 2 teaspoons starch (corn, potato, or mung bean)
  • 2 tablespoons sugar
  • 2 tablespoons soy sauce (thick, aka soy paste - see note)
  • 1 tablespoon dark soy sauce
  • 1/2 tablespoon sugar
  • 1/2 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 large eggs (whisked)
  • 1 bunch scallions (green and white portions separated and cut into 2 inch, 4cm pieces.)
  • 1/2 inch ginger (sliced into thin strips)
  • 1 clove garlic
  • 1/2 pound Chinese egg noodles (see note)
