- 1 medium carrot (peeled and sliced very thin)
- 3 cups vegetables (green, chopped, like bok choy, cabbage, sliced snow peas, sprouts or spinach)

- 3 eggs
- 1 tsp. soy sauce
- 1 tsp. sesame oil
- 2 Tbsp. soy sauce
- 2 Tbsp. hoisin sauce
- 1 Tbsp. seasoned rice vinegar
- 1/2 cup stock (vegetable or chicken)
- chopped fresh herbs
