- 10 oz. sliced mushrooms (I used crimini but shitake would be even better)
- 1 asian eggplant (small, or half of an Italian eggplant, thinly sliced)
- 2 pinches salt (divided)
- 1 lb. boneless sirloin (or top round beef, thinly sliced against the grain)
- 1/2 tsp. cornstarch
- 1/4 tsp. ground white pepper
- 1 tsp. vegetable oil (high heat, divided)
- 1 tsp. soy sauce (I used Chinese dark superior)
- 2 garlic cloves (minced)
- 1/2 small onion (finely sliced)
- 2 bell peppers (different colors, thinly sliced)
- 1 Tbsp. lime juice (freshly squeezed)
- 1 Tbsp. fish sauce
- 1 Tbsp. nam prik pao
- 2 kaffir lime leaves (sliced very thinly, optional-I used)
- 2 tsp. brown sugar
- 3/4 cup basil leaves (I used less, about a handful, Thai or Italian)
