  • 30 grams water (mange tout wash with running, drain and leave aside)
  • 1 spring onion (slice 3cm lengthways)
  • 1 chili (remove seeds and julienne)
  • 1 teaspoon ginger (finely chop)
  • 1 clove garlic (mince it)
  • 3 tablespoons light soy sauce
  • 1 teaspoon dark soy sauce
  • 1/2 tablespoon potato starch flour (or corn flour)
  • 1 tablespoon rice wine (or Shaoxing rice wine)
  • 1/2 tablespoon demerara sugar (or caster sugar)
