- 1.2 kilograms lamb shoulder (boneless, 2 2/3 pounds, cut into 1 inch cubes)
- 2 Tbsp. caster sugar (can use granulated if that is all you have)
- 50 mL red wine vinegar (3 1/2 TBS)
- 6 onions (small, peeled and halved)
- 2 cloves garlic (peeled and chopped)
- 200 mL red wine (7 fluid ounces)
- 500 mL chicken stock (2 cups)
- 400 grams chopped tomatoes (tin of, in tomato juice, 2 cups)
- 1 bay leaf (broken in half)
- 1 Tbsp. dried oregano
- 1 Tbsp. dried parsley

Amazing, converted my partner from plainer tasting lamb, i.e. minty chops. I changed the onions to 1 red onion & a shallot as apart from having all the other ingredients, this was what I had to hand.
