- 100 grams coconut palm sugar (Or use light or dark soft brown sugar in place of coconut palm sugar)
- 200 grams gluten free flour blend (plain, I use GFA Blend A, see NOTES)
- 1 tsp. xanthan gum
- 1 1/2 tsp. baking powder
- 3/4 tsp. bicarbonate of soda
- 100 grams almond meal (ground almonds)
- 1 tsp. fine sea salt
- 200 grams unsalted butter (cubed)
- 200 grams golden syrup
- 3 large eggs (room temperature – UK large, Canadian ‘Extra Large’; Australian ‘Jumbo’; and US ‘Extra or Very Large’)
- 30 mL milk (2 tbsp)
- 90 grams toffee (soft, chewy dairy, not fudge cut into small pieces)
- 75 grams unsalted butter (or dairy free alternative softened)
- 130 grams confectioners sugar (icing sugar)
- 1/2 tsp. vanilla extract
- 25 grams custard powder
- 1 Tbsp. milk (DF if required)
