- 2 Tbsp. kecap manis (Indonesian sweet soy sauce)
- 1 Tbsp. sweet chilli sauce
- 1 Tbsp. ginger (grated)
- 2 Tbsp. honey
- 1 Tbsp. soy sauce
- 150 mL rice bran oil
- 8 chicken thighs (cut into 2.5cm pieces)
- 2 eggs (lightly beaten)
- 2 Tbsp. coriander (finely chopped)
- 1 capsicum (green, finely chopped)
- 1 bunch bok choy (trimmed, stalks and leaves each cut into 3cm pieces)
- 1 1/2 cups brown rice (cooked to packet instructions)
- 3/4 cup unsalted cashews (toasted)
- 200 grams water chestnuts (drained, sliced)
