- 1/2 cup virgin olive oil (extra-)
- 6 cloves garlic (peeled, and smashed)
- 4 cups chickpeas (cooked)
- 1 cup diced red onion
- 4 cups heirloom tomatoes (diced, see notes above)
- 3 Tbsp. vinegar (white balsamic or red wine or whatever you have on hand)
- 1 bunch basil (about a cup of leaves, roughly chopped)
- 1 Tbsp. capers
- flaky sea salt
- cracked pepper
- 1/2 cup feta
- crusty bread (Good, optional, see notes above)
