- 3 cups chicken stock
- 2 cups beef stock
- hominy (Creamed, see recipe below)
- salsa verde (see recipe below)
- 8 Tbsp. unsalted butter
- 1 fresh poblano pepper (stemmed, seeded and small diced)
- kosher salt (as needed)
- 30 oz. white hominy (drained and rinsed)
- 2 cups heavy cream (plus more if needed)
- 2 cups fresh flat leaf parsley (lightly packed)
- 1/2 cup fresh mint leaves (lightly packed)
- 1/4 cup tarragon leaves (lightly packed fresh)
- 3 anchovy fillets
- 2 cloves garlic (peeled and minced)
- 1 Tbsp. capers (chopped, rinsed and dried)
- 1/2 tsp. kosher salt (or to taste)
- freshly ground black pepper (to taste)
- 1/2 cup extra virgin olive oil (or to taste)
- 1 Tbsp. lemon juice (freshly squeezed, optional)
