- 600 grams chicken thighs (deboned, cut into small pieces)
- 20 grams fresh root ginger (thinly sliced)
- 6 cloves garlic (thinly sliced)
- 7 dried shitake mushroom (soaked till soft)
- 200 grams chestnuts (fresh, see below on how to cook the fresh chestnuts)
- 50 grams bamboo shoots (sliced, optional)
- 2 cups homemade chicken stock (you can also use store bought chicken stock)

- 2 Tbsp. dark soy sauce
- 3 Tbsp. shao hsing wine
- 1/2 tsp. sesame oil
- 1 tsp. sugar
- salt (adjust according to taste)
- 2 Tbsp. oyster sauce (optional)
- coriander
- spring onions (julienne)
- red chilli (julienne)
- 1/2 tsp. sesame oil
