These were delicious! My husband says they are his new favorite cookie. I used fresh ground ginger and weighed all the ingredients as directed - came out perfectly. Crunchy outside and soft-ish inside.

This is the 2nd time I’ve made these ,this time I replaced the egg with 1 tbsp Flaxseed meal and used vegan margarine. They taste great and can be given as gifts to everyone.🎄
