- 2 cups strawberries (fresh ripe, preferably organic, washed and hulled)
- 1 cup coconut milk (full-fat canned)
- 1/2 cup vanilla rice milk (or plain, I used sprouted rice milk)
- 5 Tbsp. xylitol (you can sub stevia, but the xylitol influences the texture)
- 2 Tbsp. raw cashews
- 2 tsp. pure vanilla extract
- 1/4 tsp. almond extract (pure, optional but highly recommended)
- 1 pinch fine sea salt
- 1/2 tsp. xanthan gum (optional, this makes the texture creamier)
- strawberries (Fresh sliced, for garnish, if desired, optional)
