- 2 Tbsp. fermented black beans (Chinese, roughly chopped, don’t rinse)
- 4 scallions (minced)
- 1/2 tsp. sesame oil (Chinese)

- 1 tsp. soy sauce
- 2 tsp. kosher salt
- 1 tsp. baking soda
- 1/3 cup chicken stock (with 4 Tablespoons cornstarch or potato starch.)
- 4 large egg whites (with 1 Tablespoon Thickening Slurry.)
- 2 scallion greens (and keep separate.)
- 1 1/2 cups chicken stock
- shrimp shells (Reserved)
- 2 scallions (green parts of)
