- 2 cups steel cut oats (Quick Cooking, I use Bob's Red Mill Organic, Can use other quick oats, but skip oat soaking process if you do)
- 1/2 cup all purpose flour
- 1/2 whole wheat flour
- 1/8 cup ground flax seed (optional- I use Bob Mill's)
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/4 tsp. sea salt
- 1 1/2 cups boiling water
- 2 cups low fat buttermilk (Can sub with 1 cup other Milk choice and 1 cup plain/ greek yogurt)
- 1 Tbsp. honey (optional)
- 2 Tbsp. butter (melted)
- 3 large eggs (lightly beaten)
- 1/2 tsp. vanilla extract
- 1/2 cup fresh blueberries (or frozen, to completed batter., optional)
