  • 1 tsp. salt
  • 4 lb. cockles (clams or mussels)
  • 2 cups peas (fresh or frozen)
  • 1/4 cup tarragon leaves (fresh)
  • pepper (to taste)
  • 1 lemon (small, and a squeeze of its juice)
  • 1/2 cup sour cream (optional)
  • pernod (NOTE: A splash of, would be really good here, at the same time as the wine)
