- 1 cup sliced leeks (thinly, two medium leeks, white parts only, or sub white onion, or a large shallot)

- 1/2 cup heavy whipping cream
- 1 tsp. salt
- 4 lb. cockles (clams or mussels)
- 2 cups peas (fresh or frozen)
- 1/4 cup tarragon leaves (fresh)
- pepper (to taste)
- 1 lemon (small, and a squeeze of its juice)
- 1/2 cup sour cream (optional)
- pernod (NOTE: A splash of, would be really good here, at the same time as the wine)
