  • 4 ounces chorizo (diced)
  • 2 shallots (large, thinly sliced)
  • 3/4 pound yukon gold potatoes (baby, cut into fine, 1/2-inch chunks)
  • 2 cloves garlic (minced)
  • 1 pint cherry tomatoes (halved)

    Absolutely delicious. We used 8 oz of chorizo instead of 4, and probably 3-4 cups of kale instead of 2. Will absolutely make again.
