- 1 kg chuck steak (cut into 3cm cubes)
- 1 cup plain flour
- 6 cloves garlic (cut in half)
- 1/2 bunch thyme
- 1 tsp. black peppercorns
- 330 mL dark ale (bottles of, or 500ml Guiness)
- 8 shallots (Golden, peeled, cut in half if large)
- 1 Tbsp. vegemite
- 500 grams puff pastry (shop bought is fine)
- 100 grams blue cheese (Stilton, or similar crumbly blue cheese, use cheddar if you don’t like blue cheese)
- celery salt
- 1 egg yolk
