You don’t need a fancy cut of meat to treat your sweet to a delicious date night at home. Grab some budget-friendly steaks, a couple of Idaho’s finest, and a few herbaceous adds to make this elevated end-of-week meal. Just close your eyes and let our dirty pan gravy transport you to your favorite steakhouse, without the big spend and fancy, uncomfortable clothes. Need a cocktail? We do! Our citrus-forward old fashioned with a touch of honey and a hint of bitters will please your palate and ease your angst. Cheers!


  • 2 steaks (be thrifty, try a top round)
  • 2 Idaho russet potatoes (or carb-free alternative in hot tips below)
  • 6 sprigs fresh thyme
  • 4 garlic cloves
  • 1/4 cup heavy cream
  • 2 teaspoons honey
  • 3 dashes orange bitters
  • 1 1/2 shots Basil Hayden’s Bourbon (plus a splash)
  • 2 chunks orange peel
  • salt (staples)
  • pepper (staples)
  • soy oil (staples)
  • butter (staples)

    1. Equipment: large pan for hash browns, large pan for steaks, box grater
    2. Start by getting your two pans pre-heating on the stove and coating the bottom of each soy oil.
    3. Grab your steaks and generously salt and pepper all sides. Toss your steaks into the hot, oiled pan .

    Dude!!! Love this so much! We were a little scared about flaming the bourbon for the gravy but it turned out. We used a little too much salt on the potatoes yet they were crispy goodness! Steaks came out perfect. We used chuck eyed steaks which were marbly goodness! We didn’t have thyme so used oregano... mehhh. Get thyme next time. Fresh is best! Joel is the bomb!!
