- sea salt
- freshly ground black pepper
- 600 grams braising steak (diced into 2cm pieces)
- 1 knob unsalted butter
- olive oil (for cooking)
- 1 large onion (chopped)
- 1 tomato puree (good tablespoon, paste in the US)
- English mustard (a good dollop of, Colman's of course)
- 200 mL ale (Black Sheep)
- 350 mL beef stock (made with a Knorr beef stock cube)
- 1 bay leaf (nice-looking)
- 1 sprig fresh thyme leaves (only)
- Worcestershire sauce (a good splash of)
- 3 chestnut mushrooms (quartered)
- 4 kidneys (lambs, remove all the nasty white bits, best to use scissors then chopped into pieces)
- 320 grams puff pastry (ready-made and rolled)
- 1 egg yolk (lightly beaten to glaze)
