- 1 eye of round steak (fat trimmed, 4 ounces)
- salt
- course salt and ground pepper
- 1 orange peel (medium, and pith removed)
- 1 Tbsp. honey
- 1 romaine lettuce (small heart, coarsely chopped)
- 2 Tbsp. red onion (thinly sliced, I omitted)
- 1 carrot (small, shaved with a vegetable peeler)
- chopped celery (I added)
