- 3/4 cup roasted red peppers (chopped, See Note 1)
- 5 thinly sliced green onions
- 1/3 cup dried tart cherries (or dried cranberries)
- 1/3 cup sliced almonds
- 1/3 cup feta cheese
- 1 large lemon (3 tablespoons lemon juice & 2 teaspoons zest)
- 2 limes (large, 2 and 1/2 tablespoons lime juice)
- 1 tsp. onion powder
- 1/2 Tbsp. white wine vinegar
- 1/2 Tbsp. honey
- 1 cup cilantro (lightly packed, ~1 bunch)
- 1/2 tsp. Dijon mustard

perfect summer salad. Dressing was light, I added garlic powder.... which I almost always do. Didn't roast the peppers and was happy with the flavor in the salad. I did add a little Quinoa cooked in Chicken broth to give a little more depth and make the salad more filling for the familiy. Definitely will make again!

Great salad! Easily adaptable to what you have on hand. I added avocado, jalapeño, cucumber and chickpeas and skipped the cherries, as I didn’t have any
