- 6 lb. spare ribs (rack St. Louis)
- 2 Tbsp. kosher salt
- black pepper (to taste)
- 2 cups apple juice
- 2 Tbsp. canola oil
- 4 cloves garlic (minced)
- 2 Tbsp. ginger (finely grated)
- 2/3 cup hoisin sauce
- 1/4 cup Sriracha sauce
- 1 Tbsp. fish sauce
- 1/4 cup apple cider vinegar

Directions
- Preheat oven to 350°F.
- Pat ribs dry with paper towels. Cut each rack in half. Season ribs with salt and pepper. Make "boats" out of doubled up sheets of foil large enough to enclose each rib section. Place ribs in each boat meaty side up and divide apple juice between the boats. Seal foil boats closed around the ribs, trapping the juice in with the ribs and being careful not to break the foil. Place on baking sheets.
- Bake 2 1/2 hours. Remove from oven and allow to cool
