- 3 Tbsp. sesame oil (Chinese)
- 1/2 cup orange juice
- 2 cloves garlic (minced)
- 1 tsp. salt
- 2 Tbsp. soy sauce
- 1/2 tsp. crushed red pepper (to taste)
- 2 Tbsp. rice vinegar
- 1 cup fresh pineapple (chopped, also ok to use canned-in-juice crushed pineapple)
- 3 scallions (finely minced, whites and greens)
- 1 stalk celery (finely minced)
- 1 green bell pepper (or medium-sized red, thinly sliced)
- 8 oz. water chestnuts (drained & thinly sliced)
- 1/2 lb. mung bean sprouts (fresh)
- 1/2 cup raisins (packed, or currants)
- 1 cup chopped peanuts (coarsely, or cashews, lightly toasted)
- 2 Tbsp. sesame seeds
- snow peas (Fresh, optional, for garnish)
