- 1 bunch snake beans (cut into 7cm pieces)
- 1 tsp. black peppercorns
- 1 tsp. cumin seeds
- 1 tsp. fennel seeds
- 1 tsp. coriander seeds
- 1 tsp. fenugreek seeds
- 1 cinnamon stick
- 1 tsp. dill seeds
- 1 tsp. ground turmeric
- 1 cup desiccated coconut
- 1 cup coconut milk
- 1/2 tsp. black peppercorns
- 1 Tbsp. fish (Maldive, flakes, available from Sri Lankan and Indian food stores)
- 1/2 red onion (small, finely diced)
- 1/2 tsp. chilli powder
- 1/2 tsp. paprika (smoked hot)
- 1 lime (juice of)
- 1 tsp. sea salt
- 20 mL vegetable oil
- 1 brown onion (small, finely diced)
- 1 tsp. sea salt
- 4 garlic cloves (thinly sliced)
- 1 green chilli (small, halved lengthways, then thinly sliced)
- 1 lemongrass (stem, finely sliced)
- 2 Tbsp. curry powder (Sri Lankan fish, see above)
- 1 sprig fresh curry leaves (leaves picked, plus extra sprigs to serve, optional)
- 1 Tbsp. tamarind purée
- 250 mL coconut cream
- 1 lime (juice of)
