  • 1 stalk lemongrass (bruised and cut into 1 inch pieces)
  • 1 teaspoon seeds (fennugreek)
  • 1 cinnamon stick (1 inch)
  • 6 green cardamom pods
  • 6 cloves
  • 1 onion (medium, chopped)
  • 5 garlic cloves (minced or grated, 1 heaping Tbs)
  • 2 inches ginger (minced or grated, 1 heaping Tbs)
  • 3 tablespoons curry powder (roasted, I used Sri Lankan Curry powder)
  • 2 tablespoons red chili powder
  • 1 tablespoon vinegar
  • 3 teaspoons tamarind paste
