- 1 cup white sugar
- 3 Tbsp. fresh ginger (grated, **, I added 3)
- 3 Tbsp. garlic (grated fresh, **, I added 3)
- 2 Tbsp. red chili powder (**, I added 2)
- 2 Tbsp. salt (**, I added 2)
- 1 Tbsp. turmeric powder
- 1/3 cup black mustard seeds (ground in food processor with some of the vinegar)
- 1 lb. green chilies (whole with a slit down the middle, seeded if you desire less spice)
- 6 carrots (large, sliced)
- 3 red onions (sliced into large wedges)
- 12 shallots (whole or cut into half depending of size)
- green beans (optional)
