  • 1/2 cup crumbled feta cheese
  • 1/2 chorizo sausage (finely chopped)
  • 1 tomato (diced)
  • 1/2 lemon peel (finely grated and lemon juiced)
  • 1 cup fresh breadcrumbs
  • 1/3 cup chopped parsley
  • 1 tablespoon oregano (chopped)
  • 6 squid (bodies, cleaned)
  • 1 tablespoon olive oil
  • lemon wedges (to serve)

    Directions

    1. Preheat the grill to medium. Combine feta, chorizo, tomato, lemon peel, breadcrumbs, parsley and oregano in a bowl. Season with pepper. Spoon into squid bodies and secure with toothpicks. Brush with oil.
    2. Grill squid 2 mins each side. Drizzle with lemon juice. Cook another 2 mins, until opaque and well browned. Serve with lemon wedges.
