- 1 dried chipotle pepper
- 2 Tbsp. extra-virgin olive oil (Terra Delyssa Organic)
- 1 clove garlic (minced)
- 2 Tbsp. tomato paste
- 1 tsp. chile powder
- 1/4 tsp. smoked paprika
- 1/2 tsp. ground cumin
- 1/4 tsp. ground coriander
- 1 pinch cayenne (optional)
- 1 pinch red pepper flakes (optional)
- 1 chipotle pepper in adobo sauce (roughly chopped, optional)

- pepper
- 8 corn tortillas (** or lettuce cups)
- 2 cups arugula
- red onions (pickled)
- 1/2 cup sheep (’s milk feta cheese, crumbled)
