- 15 1/2 lb. whole chicken (cleaned and washed)

- 1 onion (large, peeled and quartered)
- 2 carrots (peeled and cut in half)
- 2 parsley (roots peeled and cut in half)
- 2 rib (celery with tops, peeled and cut in ½ -inch chunks)
- 7 whole allspice
- 10 whole peppercorns
- 1 Tbsp. kosher salt
- 6 sprigs parsley (each, dill and thyme)
- 5 1/2 lb. fresh lima beans (shelled)
- 1/2 cup orzo (or any small pasta, or rice.)
- 1 carrots (medium, finely grated)
- 1 lb. baby spinach (or other lettuce shredded)
- herbs (• Freshly chopped, your choice, I like the combination of cilantro and a small amount of mint)
- 2 cups chicken (shredded)
- 3 scallions (chopped)
- black ground pepper
- salt
- 1/2 cup grated Parmesan cheese (finely)
- lemon wedge (for squeezing into the bowls of soup if desired)
