- 200 grams minced pork (fatty is good, belly etc)
- 4 dry shiitake mushrooms (large, simmered in a little water)
- 1 spring onion (sliced whites)
- 1/2 tsp. fresh ginger (minced)
- 1 1/2 Tbsp. light soy sauce
- 1 dash sesame oil
- ground white pepper (Big pinch coarse, whole pepper corn please for order)
- 1 pinch salt (flakes, to taste)
- 24 wonton (skin wrappers)
- greens (Remaining spring onion, sliced for garnish, optional)
- 1 Tbsp. vegetable oil
