Carb/sodium-conscious modification: Did not pre-salt 2 lbs of peeled and sliced Persian cucumbers. Used Trader Joe white balsamic vinegar, 1 tsp Kosher salt, 1 tsp sugar, 2 Tbs reduced sodium soy sauce. Included 1/2 sliced medium white onion. W/out pre-salting/draining, cucumber liquid will dilute and reduce the intensity of the vinegar. No seeds because of medical condition. Super yummy and crispy and I got it all to myself bc husband won’t eat cucumber.😉

Halved recipe since I only had one english cucumber. Since my spiralizer made long strands of cucumber, I cut up cucumber spiral into perfect bite sizes. I added red pepper flakes and now I am in love with the recipe.

Amazing! Even the kid who hates all veggies, finished off the bowl while doing the dinner dishes!
I did not spiral the cucumber, I just sliced it really thin, and then I let it chill for about an hour while preparing the rest of my meal. Simple and delish!
