- 28 oz. spinach (800g, frozen)
- 8 oz. feta cheese (200g, crumbled)
- 8 oz. ricotta (or goat's cheese, crumbled)
- 2 large eggs (lightly beaten)
- 1 bunch fresh dill (chopped, about 1/2 cup)
- 1 bunch leaf parsley (fresh flat, chopped, about 1/2 cup)
- 8 spring onions (scallions finely chopped)
- 2 leeks (large, white part only finely chopped)
- 4 phyllo (balls homemade, or 1 pack phyllo)
- 4 oz. pine nuts (100g, toasted)
- ground black pepper (freshly)

- grated nutmeg (Pinch freshly)
- 17.6 oz. lean lamb mince
- 8 oz. feta cheese (crumbled)
- 2 onions (large, finely chopped)
- 1 Tbsp. caster sugar
- 4 oz. apricots (dried, finely chopped)
- 3 Tbsp. panko breadcrumbs
- 2 handfuls fresh mint (chopped)
- 2 tsp. cinnamon
- 3 Tbsp. dukkah
- 2 tsp. salt (or to taste)
- 4 oz. pine nuts (toasted)
