Terrific.
I am always looking to cut down on my meat consumption and love it when I can make a delicious meal sans meat. I added more than a pinch of nutmeg because who doesn’t love nutmeg?
Super quick and easy to assemble as I used frozen spinach.

Fantastic!!!
So- didn’t follow the recipe, exactly...
Used about 3/4 large curd 2% cottage cheese.
No leeks, but green onions and 1/3c of chopped garden fresh onion and
sautéed in olive oil.
Used fresh mush- about 4 Oz cut up,
add 3/4 bag of fresh spinach and kept stirring until all spinach was mostly cooked.
Added some pepper.
Instead of whole milk, used 3/4 cup of canned evap 2% milk.
DONT forget pinch of nutmeg and Cayanne pepper!!
Put just about 1/4 cup of shredded Italian cheese over bottom of that 10 min cooked refrigerated pie crust.
Poured in the entire mix
Then cut pieces of fresh mozzarella and scattered on the top of the mixture- used 5 of these as it was already 2 day’s past use by date.
Soooooo goooddddd!! My husband and I could hardly stop eating, but that was our only dinner component and we have half pan left!!
Could Easley have made this with just the crust on the bottom of the pan. Didn’t need the piecrust and Jean or relieve the back of it.
