- 2 lb. flank steak (you can use up to 3 pounds as a larger meal)
- 2 Tbsp. Cajun seasonings
- salt
- pepper
- 2 yellow bell peppers (cored and sliced, I used some sweet golden treasure peppers from my garden)
- 6 serrano peppers (sliced)
- 1 small onion (chopped)
- 4 cloves garlic (minced)
- 8 oz. baby spinach
- 2 cups jack cheese (shredded Monterrey, or use your favorite melty cheese)
- 2 Tbsp. olive oil
- 2 lb. flank steak
- 2 Tbsp. Cajun seasonings
