- 15.5 oz. garbanzo beans (drained)
- 2 Tbsp. grated Parmesan cheese (freshly)
- 2 cloves garlic (peeled)
- 1 tsp. fresh oregano
- 2 heirloom tomatoes (medium, seeded and cut into 1-inch chunks)
- 1/2 loaf whole wheat french bread (or baguette, sliced diagonally about 1-inch thick, lightly toasted, about 8 sliced (used 8 ounces))
- 1/2 cup corn kernels (fresh)
- 1 purple onion (medium, peeled and diced)
- 1 cucumber (medium, peeled and diced)
- 1/2 cup Wish-Bone Bruschetta Italian Dressing
- 3 cups fresh spinach leaves (washed well and any tough stems removed)

Directions
- In a food processor, puree the beans together with the parmesan cheese, garlic, and the oregano until smooth and set aside. mixture over each serving.
- In a large bowl, add the tomatoes, corn, onion, and cucumber. Add half the dressing and toss until well coated.
- In a large bowl, add the spinach and the remaining dressing and toss until well coated. Divide the spinach evenly between 4 serving plates. Spread some of the garbanzo bean mixture over each slice of bread. Top each serving with two crostini, then spoon the vegetable mixture over each serving.
