Description
Miso soup is a traditional Japanese soup made with a stock called 'dashi' and softened miso paste. The added ingredients are entirely up to you. This recipe for miso soup suggest including spinach and tofu for a vegan and vegetarian friendly soup. Sweetened with honey and seasoned with fresh cilantro, you can also add fresh chili pepper rings for a bit of heat. The end result will be a tasty soup that will warm you from the inside out on a cold day.

- 2 soup (individual portions of instant miso)
- 600 mL water
- 40 grams spinach (washed)
- 200 grams tofu (diced)
- 2 Tbsp. coriander leaves (stalks removed)
- 2 tsp. honey
- chili pepper (Fresh, sliced in rings for garnish, optional)

Directions
- Bring the water to the boil and add the miso soup. Stir well.
- Stir in the spinach, and add the tofu and coriander.
- Remove from the heat, leave to rest to allow the flavors to blend.
- Before serving, add a teaspoon of honey and garnish with chilli.
